Try this warm, savory rice bowl, complimented by a cool, crisp cucumber salad!
- zucchini (1 per person)
- cucumbers (1 per person)
- canned diced tomatoes
- feta cheese
- Sriracha (optional)
Cut cucumber. Put into bowl. Squeeze one lime over top, along with salt. Mix together. Place in fridge until you’re ready to eat.
Cook chicken in pan with desired seasoning(s).
Cut zucchini. Saute in separate pan with chopped onions. Top with salt and pepper. Add in diced tomatoes and feta cheese crumbles; cover. Simmer for about 5-10 minutes.
Scoop cooked rice into half of a bowl. Place chicken on top. Cut and add slices of avocado. In the other half of bowl, place zucchini mixture. Add Sriracha for a little kick!
Bring out the side cucumber salad from fridge, and ENJOY!
